Bolivian Quinoa
Quinoa is a food product native to the Andes that the Incas recognized as their main food source due to its abundance in nutrients. In fact they considered it sacred and miraculous.
Quinoa has been part of the diet in South America for thousands of years, and recently has become renowned as a “super food.”
Many organizations define it as “the perfect food for the human being,” because it has the eight essential amino acids and an exceptional balance of proteins, fats and carbohydrates.
Quinoa has not been genetically modified and is usually grown organically. Although there are many varieties of quinoa, the best and highest in demand is Royal Quinoa.
Royal Quinoa is grown in areas with extreme climatic, geographical and ecological features. It grows only in the southern altiplano of Bolivia around the Uyuni salt flats and the Coipasa salt flats, at an altitude of 3600 m. and exposed to dry, cold weather.
Since the crops are so close to the salt flats, the soil where this grain grows has a higher concentration of salt than usual.
The grain also benefits from the intensity of the solar radiation generated by almost 20,000 km2 of white salt plains reflecting the sunlight. Royal Quinoa differs from common quinoa because it has:

- Better flavor and texture, a more pleasant aroma. and a pearly color.

- It has all the essential amino acids, that is, those that the organism is incapable of producing and therefore needs to ingest in the food.
